1 pita
a thick layer of "Sun Dried Tomato Hummus"
Slices of Roma tomato
Leaves or Romaine Lettuce
A couple slices of Tofurky Slices.
I wanted a real crispy thin pita here, so I cooked it for a while, probably a bit too long. The tomatoes started getting wrinkly on the sides and some of the lettuce had wilted.
The pita had developed a nice crisp layer, and as Jason (my roommate) said, "The hummus really dominates the flavor palette." I think he's very right about that, which is why I put on very little tofurky, and only slices, which don't have much flavor. That way, the tomatoes and lettuce could do their job, adding texture to the sandwich, while the pita and hummus provided the real personality.
