When I learned we had a Panini machine, I only had ingredients in the house I would have anyways. And living in Irvine, I didn't have the freshest or most local organic produce, as the farmer's market hadn't come around yet. But I got straight to work.
For the bread I used the Whole Wheat from Panera, which is pretty thick and hearty, while still being pretty soft.
For the "meat," I used Tofurky sandwich slices (note to readers: I'm *mostly* vegetarian, so most of what you read here will be vegetarian paninis!).
I then threw on some slices of roma tomato,
a layer of pepperjack cheese slices
and a light layer of Trader Joe's spring mix salad.
The results were delicious. The bread had become slightly crispy, letting me crunch my way through the foliage into the gooey layer of spice into the juicy sweet tomato and into the meat of the opertion. Needless to say, this sandwich was a total success, and the club deserves its place in the heart as a true panini classic.
